Lately Brian and I have been feeling a ton of stress, more so Brian. Poor guy goes to work full time from 7:40 AM- 3:00 PM and then comes home just long enough to shower and cram in some homework before he has to leave for class around 5:30 PM. This has been his routine for the last 4 semesters and I just don’t know how he does it. This semester is even harder than ever because he is taking lots of core classes to be able to graduate in May. Then there is the added pressure of getting a job in his field of study soon after.

I have always known that there is a lot of stress being a guy, especially a married guy because of all the responsibility that is put on their shoulders. Brian and I would love to have kids someday and have me stay home to be with them and to do that means Brian will have to compensate for the lack of extra income. That right there is HUGE cause for stress especially if we want to live in Orange County where we are currently.

So to relieve some of that stress I decided to do something sort of romantic I guess you could say… I sent Brian and invitation to a nice dinner the other night (the one night he doesn’t have class). I set the table, got out some candles, put on a sentimental mixed CD and made Roasted Chicken for dinner. Now I have never roasted a chicken so I once again headed for the internet in search of some easy recipes that didn’t take 2-3 hours to make. I found one on www.kraftfoods.com (one of my favorite recipe sites). I bought 2 Cornish hens for about $3 each and weighed about 22 oz each. I’m not going to lie, when I took them out of there opaque shrink wrapped packages and held them it kind of freaked me out a bit because you are holding it by it’s arms and legs and to realize that YES this is a chicken. I don’t know about you, but when I eat meat I don’t like to picture what part of the animal I am eating so for me this was a little weird. Anyways… it was one of the easiest dishes I have ever made! All I did was take the hens, rinse with water, patted them dry, sprinkled salt and pepper all the way around, and put them in the oven for about 20 minutes at 350 degrees, then I took them out and poured honey all over them and added a can of chicken broth to the pan and stuck them back in for another 40 minutes, basting ever 5-10 minutes until the last 10 minutes. The chicken was super tender and delicious!!! I couldn’t believe how perfect and easy it was. I definitely will admit that I impressed myself and my husband.

You are such a good wife. I'm sure Brian is stressed but, he must also be very happy!
